Blueberry White Chocolate Baked Oatmeal
This is a supposedly a breakfast (wink, wink,) but really could be a dessert. The best thing is that this is a make ahead mix, and then you can enjoy it practically forever. (I've had mine in the pantry for a year now.) If your sweet tooth isn't quite at Willy Wonka strength, you can tone the sugar down, all the way down to forgoing it completely.
Drizzle with cold heavy cream and serve
Ingredients:
Mix
5 cups rolled oats
2 1/2 cups dry milk
1 1/4 cup brown sugar
2 1/2 cups dried blueberries
1 1/2 cups white chocolate
1 T. cinnamon
2 tsp kosher salt
Day of
2 tsp. butter and 2 tsp brown sugar/serving
Heavy cream to serve
Method:
Mix all make ahead ingredients together. Store in an
airtight container.
Day of (individual servings)
Mix 1/3 cup boiling water with 1 tsp butter and 1/3 cup dry mix in a ramekin.
Bake for 25 minutes at 350 degrees
Remove from oven and brush with additional tsp of butter and sprinkle brown sugar over the top.
Broil for 1-2 minutes until caramelized.
Day of (bulk)
Mix 3 cups dry + 3 Tbsp butter + 3 cups boiling water in 9x9 casserole dish. Bake at 350 for 50 minutes. Brush with butter and sprinkle with brown sugar. Broil until caramelized.
