Jamie Oliver's 5 minute Green Spaghetti

This is by far one of the easiest sauces possible.  The fact that it's fresh ,vegetable forward, and beautiful doesn't hurt.
Note: This makes enough for two.



Ingredients:


  • 5 ounces dried string pasta
  • 4 cloves purple garlic (peeled but left whole)
  • 1 ounce Parmesan cheese (grated)
  • 1 ounce ricotta cheese
  • 7 ounces Lacinato kale
  • 1 1/2 tbsp extra virgin olive oil + extra to serve


Methods:


  1. Bring a pot of salted water (with enough water to cook the pasta) to a boil.
  2. Meanwhile, remove the stalks from the kale and discard
  3. Fan the dried pasta into the boiling pasta water.
  4. Drop the kale leaves into the middle of the pot with the whole cloves of garlic
  5. Stir to submerge the kale (it will keep popping to the top.)
  6. Cook for 5 minutes.
  7. Meanwhile, put the Parmesan cheese and olive oil into a food processor. 
  8. Remove the kale and the garlic with tongs and drop straight into a food processor.
  9. Pulse until the mixture is smooth.
  10. Season with salt and pepper.
  11. Drain the pasta (it should be ready by now -- a total cook time of 7-8 minutes,) reserving a quarter cup of pasta water in a measuring cup.
  12. Add the kale sauce to the pasta, adding the reserved pasta water, and cook down until the sauce is rich and thick.
  13. Serve topped with a couple of spoonfuls of ricotta and extra Parmesan and/or olive oil to taste.
